So I've been feeling a little under the weather for the past few days; I stayed home from school yesterday and went home early today. I had a big Valentine's Day dinner planned for my family, but now they won't let me cook for them because they don't want to tire me out. We are getting takeout instead.
However, because I haven't posted in a few days, I still wanted to make something! It's not Valentine's Day themed--instead, it is something delicious that can be made year-round!
When I was little, my favorite bakery was The Bread Garden in Berkeley. All of my doctor's appointments are in Berkeley, and my grandparents live there, so I got to go to this bakery a lot. They had the BEST garlic cheese bread that I've ever had. It came in all sorts of forms: big loaves, baguettes, and spiral rolls. Unfortunately, earlier this year, we tried to go there, but it was closed :(. We never found out why. That's one of my least favorite things: finding out that one of your favorite food places is gone, especially the ones from your childhood.
Now, in order to fill the void left by The Bread Garden, I make my own cheesy garlic rolls. With the breadmaker, they are very easy to make. And while they are not nearly as good as the ones from The Bread Garden, I think they are an acceptable replacement.
First, put the water, milk, flour, sugar, salt, softened butter, egg, half of the garlic cloves, and yeast into the breadmaker, according to the manufacturer's instructions. Select the basic dough cycle and press start.
In a small bowl, melt the remaining butter and stir in the garlic. Line two baking sheets with parchment paper. When the dough is done, it should look like this:
Divide the dough into 24 equal pieces.
Shape pieces into rounds, and then tuck a piece of cheese into the dough. Make sure to pinch the dough together well at the bottom. I didn't do this well enough, apparently, and the cheese melted out.
Place rolls onto the baking sheet, pinched side down. Brush with the garlic butter.
The next step is optional: I had some leftover shredded cheddar and I put a little on top of each of the rolls. They looked fancy :).
Bake for 15-18 minutes or until browned.
As you can see, a few of the rolls leaked cheese. They were still very good though :). They are (like most baked goods) best straight out of the oven.
Here's the recipe:
Cheesy Garlic Dinner Rolls
Ingredients:
1/2 cup warm water
1 1/2 T active dry yeast
1/3 cup, plus 1 t sugar
1 cup milk
1/4 cup butter (softened)
4 cloves garlic (minced)
1 t salt
1 large egg (lightly beaten)
4 to 5 cups all purpose flour
8 oz. cheddar, Colby-jack, or pepper jack cheese (cut into 24 cubes)
1/4 cup butter (melted)
Instructions:
- Put all ingredients except for cheese, melted butter, and 2 of the garlic cloves into your bread machine as instructed by your bread manufacturer.
- Line two sheets with parchment paper.
- Combine the remaining garlic and melted butter in a small bowl.
- When the bread machine beeps at the end of the cycle, take the dough out and divide into 24 equal pieces. Shape the pieces into round balls.
- Tuck a cube of cheese into each dough ball and pinch the dough tightly together at the bottom.
- Place rolls, pinched side down, onto the prepared pans.
- Brush the tops of the rolls with the garlic butter.
- Bake for 15 to 18 minutes at 375 degrees F, until the rolls are golden brown.
- Eat.
